Lychee, Lime and Cream Frost
You'll Need:
Preparation - 5 minutes and 2 hours freezing time
13 oz can lychees in syrup, drained
1 fresh or dried lime leaf, chopped, or grated rind of 1 lime
7/8 cup heavy cream
Procedure:
Line a plastic tray with waxed paper and scatter on the lychees, making sure they are not touching.
Freeze for at least a couple of hours until solid.
Place the frozen lychees in a food processor with the lime leaf. Turn on the motor and slowly pour in the heavy cream. As the cream hits the frozen lychees it will semi-freeze into a thickened, frosty mixture.
Divide between chilled glasses or bowl and serve.
