ham steaks with fried apples
You'll Need:
6 country ham steaks (about 3oz each, cut 1/4-inch thick)
4 cups milk
3 1/2 tbs butter
2 medium Granny Smith apples, cored and sliced into 1/4-inch wedges
1/2 cup apple cider or unsweetened apple juice
Procedure:
In a shallow dish, place ham steaks and milk. Cover and refrigerate overnight. Remove ham from milk and pat dry with paper towels. In a large skillet, melt 2 tbs. of the butter over moderately high heat. Add the ham steaks and saut, turning once, until nicely browned, about 2 minutes each side. Remove the ham to a platter. Add remaining butter and the apples to the skillet. Cook, turning occasionally, until the apples are lightly browned, about 8 minutes. Increase the heat to high and return the ham steaks to the skillet. Add the cider and toss to coat ham. Cook until reheated, 3 to 5 minutes. Remove the ham steaks to the platter. Boil the cider until it thickens and glazes the apples, about 1 minute. Spoon the apples over the ham steaks and serve hot.
