Acai Detox

skillet corn fritters
You'll Need:
1 16oz can whole kernel corn, undrained
1/3 cup evaporated milk
2 eggs, beaten
1 1/2 cups all purpose flour
2 tsp baking powder
3/4 tsp salt
1/8 tsp nutmeg
vegetable oil
Procedure:
Drain corn, reserving liquid; set corn aside. Add enough corn liquid to milk to equal 1/2 cup. Combine milk mixture and eggs; mix well. Combine remaining ingredients except oil; gradually add milk mixture, stirring until smooth. Stir in corn. Heat 1/4 inch deep oil in large skillet (to about 350 degrees F.). Drop in corn mixture by heaping teaspoonfuls; cook only a few at a time, turning once. Fry 3 to 5 minutes or until fritters are golden brown. Drain on paper towels and serve immediately.
